Is it really better in the buff?

Want to lose weight? Suffering from arthritis, asthma, acne, cancer? Concerned about the welfare of animals? How about people? Local Economy? The Environment? Good, then you're in the right place to make a difference.

Personally, I have a rabid passion for environmental conservation and sustainability, optimum mental, physical, and spiritual health, animal rights, and human rights, so the answer is clear: plant-based, organic foods.

Others out there may simply want to improve their dietary choices to combat chronic illness or to lose weight, or contribute less to environmental degradation, or maybe you just have an emotional attachment to cows. ;) In these cases, you may be satisfied with making minor changes to your grocery list, and so this blog can be a tool for a reformation, rather than a total transformation. Great!

Either way, I am here to assist you and guide you along your journey to a healthier you! This blog has something for everyone, even the die-hard omnivore, because even meat-eaters like the occasional vegetable.

Gluten-Free Too!

Oatmeal Pancakes
adapted from Vegan Lunch Box
Ingredients:

1/4 tsp sea salt
1/2 tsp cinnamon
3 tbsp flaxseed meal (I use Bob's Red Mill, also)
2 c non-dairy milk (I have used both sweetened vanilla almond and/or soy, as well as unsweetened plain/vanilla almond and/or soy...play with your flavors!)
1-2 tbsp applesauce (maple syrup can be substituted)
1-2 tbsp maple syrup (applesauce can be substituted)
*I like to use one tbsp of each for texture and flavor preferences
2 tsp baking powder**

Directions:
*VERY important to follow them in this order!

Pour oats into a food processor and pulse to create coarse oat flour
In a large mixing bowl, combine flour, salt, and cinnamon
In the blender, emulsify flaxseed, milk, applesauce, and syrup
Pour liquid mixture into dry mixture and stir until well-incorporated
Let stand for 3-5 minutes

At this time, heat up your skillet (medium will do) with just a little bit of vegetable or seed oil (I use sesame!)
Once the skillet is hot and ready, ADD BAKING POWDER TO MIX**
Once you have stirred in the baking powder, your batter should be thick and gooey; this is good.

Prepare just like pancakes (to your liking) but be careful not to burn these; they will not bubble when they're ready to be flipped, like pancakes do.
